Crazy Cheap & Easy Dinner Recipe #5–Dessert Time!

KC is a blogger who blogs all about desserts and I thought at the end of the week I would start having the last day be “Dessert Time” who doesn’t love dessert. Here is more about her:

“I a wife to a football official and mom to 2 kids, Brooklyn 4 1/2 and Brison 2 1/2.  We are a self-professed Disney-obessed family.  We get our kids to eat their dinner by telling them they will grow big and tall and be able to ride California Screamin’!  I know, we need therapy!  I have always loved to cook and have wanted to start a blog about cooking, but there were so many different ones out there that I was intimidated.  I decided to just go for it last September and have had a blast!  I wanted to give tribute to my Grandmothers because they are such good cooks and my Grandma Travis ALWAYS has a different dessert for us!  I figured if she could do it, at age 86….so could I!”

Pudding Cookies

I continue to be amazed at absolutely how many DIFFERENT cookie recipes there are out there!
My friend at work gave me this one and I thought it sounded interesting.
Pudding…in a cookie?
Really?
Really!
You can do it with ANY type of pudding too!
This gives SO MANY different options for cookies!
I thought i’d take a walk on the wild side and go for chocolate pudding!
I know…I’m daring!


2 1/2 cup flour
1 tsp baking soda
1 cup butter, softened
3/4 cup brown sugar
1/4 cup white sugar
1 3.4 oz package instant pudding mix….(really, ANY flavor!)
2 eggs
1 tsp vanilla extract
2 cups chocolate chips
1 cup chopped nuts (optional)

Preheat oven to 350*

In a large bowl, cream together butter and both sugars.  Add the instant pudding mix until blended. Stir in the eggs and vanilla.  Combine the dry ingredients and add slowly.  Once combined, add the chocolate chips and nuts.
Place onto ungreased cookie sheet…or use that parchment paper that I love so dearly!
I use my trusty Pampered Chef mini scoop to make my cookies!
I usually fit between 20 and 24 cookies on a sheet.
I love to have them small and bite size…
that way you don’t feel like you are eating a lot either!
Bake for 12 minutes.
Cool on a cooling rack!


These cookies were so moist!
I was so impressed!
It made between 3 and 4 dozen cookies!
Not enough in my opinion!
