Easy Salad Wraps

It is almost June…it should be warm enough to worry about heating up your house too much when cooking dinner…right? Well since it isn’t that hot here, how about you save this idea until it is? You just heat up a pan for a few minutes and that is all the heat you have to use in the house. Also, this is the perfect “use up the leftovers” or “I forgot to go grocery shopping” or “BOY it has been a long day” recipe.

Easy Salad Wraps

Ingredients…ANYTHING YOU HAVE IN YOUR FRIDGE! Here are some ideas:

Meat–lunch meat, bacon, leftover chicken, burrito meat or no meat at all

Beans–garbanzo beans, kidney beans, black beans (great substitution for meat)

Vegetables–carrots, peppers, cucumber, red onion, sprouts, squash, anything you love in a salad or that you have in the fridge can be thrown in!

“Extras”–Cheese, croutons, seeds, nuts, etc.

Dressing of your choice

Romaine Lettuce

Tortillas

Olive Oil

Salt

For example, on this day I had red onion, cilantro, garbanzo beans, a bit of bacon and cheese.

Directions:

1. Chop up the romaine lettuce and all your other ingredients. Put in a big Tupperware container or in a bowl that you can cover with saran wrap.

2. Add the salad dressing to the bowl and shake well so dressing coats all of the salad.

3. Heat up a pan with olive oil and salt. Then place tortilla in it to cook one side until a bit crispy and brown. Just a BIT.

4. Then flip the tortilla and put your salad on top.

5. Give it just a minute to cool a bit so you can fold it into a wrap. And voila! Doesn’t look like leftovers anymore, does it?
